The Perfect Recipe For Cold Winter Nights

Winter is here, and The Reject Shop has everything you need to help cook up a storm. Once you’ve grabbed some savvy cookware bargains, it’s time to get creative with this delicious meatball recipe. This simple, winter recipe ticks all the boxes. It’s healthy (to keep winter colds away), it’s warm (like a big bowl of hugs) and it’s easy to make (more time on the couch to watch your favourite shows).

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 white onion diced
  • 2 cloves garlic minced
  • 1 Birdseye chilli chopped
  • 700g bottle passata
  • 400g can diced tomatoes
  • 1 small red capsicum diced
  • 1 beef stock cube
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 handful of fresh flatleaf parsley (or 1 tsp of dried parsley)
  • 2 bay leaves
  • 1 egg
  • 1 large carrot grated
  • 500g beef (or pork) mince
  • 100g Danish feta
  • 4 small zucchinis spiralised
  • Shaved parmesan to serve

Method

  1. Combine 1/3 of the garlic, egg, carrot, mince and feta in a bowl. Season with salt and pepper.
  2. Divide and roll mixture into individual balls and place on a greased tray
  3. Place meatballs in oven and cook for 20 minutes turning once
    Handy tip: once meatballs are just cooked, add them to the sauce to finish them off. This will keep them juicy.
  4. Heat oil in a large saucepan over medium heat and sauté onion
  5. Add the rest of the garlic, chilli and capsicum and cook for a further 3 minutes
  6. Pour in passata and tomatoes and bring to the boil
  7. Add beef stock cube, paprika, oregano, parsley, bay leaves and season
  8. Cover and simmer for 20 minutes
  9. Steam zucchini noodles until soft
  10. Serve meatballs and sauce on a bed of zucchini noodles and top with shaved parmesan
    Handy tip: the sauce can be made up to two days in advance
